Beef soup bones are excellent for making rich broth, vegetable beef soup, or bone stock. The marrow and connective tissue create deep flavor and gelatin.

Simple Beef Soup Bone Method

Ingredients

  • 3–5 lbs beef soup bones
  • Water
  • 1 onion, quartered
  • 2–3 carrots
  • 2 celery stalks
  • Garlic cloves
  • Salt and pepper
  • Optional:
    • Bay leaves
    • Thyme
    • Parsley
    • Apple cider vinegar (helps extract minerals)

Best Flavor: Roast First

  1. Heat oven to 425°F.
  2. Place bones on a baking sheet.
  3. Roast 30–45 minutes until browned.

This adds much deeper flavor.

Stovetop Method

  1. Put roasted bones into a large stockpot.
  2. Cover with water by 2–3 inches.
  3. Add vegetables and seasonings.
  4. Bring to a gentle boil.
  5. Reduce to low simmer.

Cooking Times

  • Basic broth: 4–6 hours
  • Rich bone broth: 12–24 hours

Skim foam occasionally from the top.

Slow Cooker Method

  • Add everything to crockpot.
  • Cook:
    • Low: 18–24 hours
    • High: 10–12 hours

Very easy and works well.

Pressure Cooker / Instant Pot

  • Cook about 2–3 hours on high pressure.
  • Natural release afterward.

Fastest method with excellent results.

For Vegetable Beef Soup

After broth is finished:

  1. Remove bones.
  2. Pull off any meat.
  3. Add:
    • Potatoes
    • Carrots
    • Tomatoes
    • Green beans
    • Barley or noodles if desired
  4. Simmer until vegetables are tender.
